Nuts About Carrot Soup
INGREDIENTS
4 lbs. carrots, peeled and cut in large chunks
64 oz. low sodium chicken broth
2 medium onions, peeled and cut in large chunks
2 tsp. Rub My Fish
1-2 tsp. salt
1-inch piece of ginger, peeled
1/3 cup Natural peanut butter or almond butter
DIRECTIONS
Put carrots, broth, onions, Rub My Fish, 1 tsp. salt and ginger in large pot. Bring to a boil, then reduce heat to low. cover and cook until vegetables are very soft. take off heat and add peanut butter. Puree soup with immersion blender or jar blender (puree in small batches for safety). Taste and adjust salt. Serve topped with croutons or crushed peanuts.
