Dress Those Little Potatoes

INGREDIENTS
3 lb. Baby potatoes, cut in half
2 Tbsp. Extra virgin olive oil
2 Tsp. Dress That Salad
3/4 cup shredded Parmigiano Reggiano
Directions: Preheat oven to 325 degrees. In a large bowl, combine olive oil and Dress That Salad. Add potatoes and toss until thoroughly coated. Line a sheet pan with parchment or a nonstick silicone mat. Add potato mixture to the pan, placing the potatoes cut side down. Spread cheese over potatoes, letting a little fall onto the pan around the potatoes. Bake for 45-50 minutes or until the potatoes are fork tender and the cheese is golden brown. Remove from oven and let cool for a few minutes, the cheese will get crispy as it cools.
